Ingredients:
6 tsp olive oil
1.0small clove garlic, minced
1 tsp ground cumin
6 tsp tomato juice
8.0small black olive, sliced
3/8 Lbs. garden salad
9 tsp lemon juice
1/4 tsp pepper
1/8 tsp salt (optional)
1.0 red onion\raw, thinly sliced
1.0 avocado, halved lengthwise, pitted, peeled and cut into .25 inch slices
2 cups grapefruit segments
1/4 cups cilantro or parsley, chopped
Cooking Directions:
Combine first 5 ingredients and 2 Tbs. lemon juice in a mixing bowl. Arrange lettuce on individual salad plates. Top with avocado grapefruit salad and sprinkle with olives. Combine remaining ingredients, except cilantro, in a jar with a tight-fitting lid. Shake vigorously. Add cilantro and shake again. Pour dressing over salad and toss.
* you can substitute oranges or any other citrus fruit. for those who are on meds that caution against graperfruit consumption. I use 1 lg. orange, 1 half a lemon and one half a lime, sectioned as a substitute.

May 30, 2009 3:39 PM Recipe sounds great but it is important for individuals to check with their pharmacist to find out if grapefruit would cause an interaction with any of their medications. I recently discovered I cannot eat or drink grapefruit because it causes some of my medications to be ineffective. |

May 28, 2009 4:22 AM We need more recipes on here that are both Low Cholesterol and Low Sodium. I am happy to see this one. Many people who take certain types of meds can't eat the grapefruit but I'd skip the certain pill I take for just a day to try this one. The cumin in this recipe is going to send the flavor over the top.
