I'm always looking for new recipes and this one sounds DEEELISH! I'll be trying it soon! I'll also be printing it out for the patients at the doctors office where I work. I swear I have NEVER seen so many 'deniabetics' in my life! Actually had one patient in the other day who stated he didn't know why his readings were so high. When asked what he had to eat he told us ICE CREAM! Unbelievable! And people wonder why we will never have health care for everyone in this county.

I wonder if this would work with sugarfree chocolate pudding to make it more like chocolate icecream?

Wow, thanks Avera!! I got Cherry jello and made it for my dessert for Easter dinner. The rest of the crowd were eating Rolog Ice Cream. But I didn't care as this my amazing dessert was great! I froze it in 8 separate containers and that way they're ready and pre made. I think, I give the recipe to my son. He has 3 kids, 1 is Type 1 would make fantastic creamsicles for them.

It serves 8. Just divide the whole thing into 8 equal portions. It is easy to cut after it freezes.
