Mexican Pita Pile Ups

Ingredients
4 Bread, pita, whole wheat, small, 4"
1 cup cooked chicken breast, diced
1 tbsp fresh lime juice
1 tsp ground cumin
1/4 cup canned green chile peppers , mild
1 cup chopped tomato , seeded
1/4 cup fresh cilantro
2 oz canned black olives , drained, sliced (about 15 olives)
1 cup Cheese, cheddar, sharp, reduced fat, finely shredded
Directions
Place pita breads on work surface. Top each with 1/4 cup chicken, lime juice, cumin, chilies, tomato, cilantro, olives and cheese.
Place each pita in quart-sized resealable plastic food storage bag. Seal and refrigerate until ready to serve.
To serve, place pita on microwavable plate. Microwave at HIGH 1 minute or until cheese is melted. Let stand 2 to 3 minutes until crust is slightly firm.

Since this is a diabetic site and many of us take insulin, it is extremely important that this info. is accurate!
I don't believe 19.2 carbs total. One 4" whole wheat pita has 16 carbs. A full size pita, 6" has 35 carbs. And this whole recipe is for one serving!
