Oven- Poached Salmon Fillets

1 lb.Salmon fillet,cut into 4 portions,skin removed if desired
2 tbsp. dry white wine
1/4 tsp.salt freshly ground pepper to taste
2 tbsps.finely chopped shallot (1 med)
Lemon wedges for garnish

Directions

1.Preheat oven to 425 deg.F.
Coat a 9 in glass pie pan or an 8 in
glass baking dish with cooking spray.
2.Place salmon ,skin-side (or skinned- side down),in the prepared pan.
Sprinkle with wine.Season with salt
and pepper,then sprinkle with
shallots.Cover with foil and bake
until opaque in the center and
starting to flake,15-25 mins.
depending on thickness.
3.When the salmon is ready,transfer to
dinner plates.Spoon any liquid
remaining in the pan over the salmon
and serve with lemon wedges.

I THINK I MIGHT LIKE IT I WILL TRY IT ONE NIGHT THIS WEEK. I LOVE FISH BECAUSE I GREW UP IN MYRTLE BEACH WHERE YOU COULD GET ALL THE FISH YOU WANTED AT ANY TIME. THANKS GERRIE

This is such a simple and quick recipe to fix salmon. Covering it to cook is going to make it so tender. Also, spooning the remaining liquid on top is a nice touch. Wonderfully low in carbs.
