Oven- Poached Salmon Fillets

Ingredients

  • 1 lb.Salmon fillet,cut into 4 portions,skin removed if desired

  • 2 tbsp. dry white wine

  • 1/4 tsp.salt freshly ground pepper to taste

  • 2 tbsps.finely chopped shallot (1 med)

  • Lemon wedges for garnish

Directions

  1. 1.Preheat oven to 425 deg.F.

  2. Coat a 9 in glass pie pan or an 8 in

  3. glass baking dish with cooking spray.

  4. 2.Place salmon ,skin-side (or skinned- side down),in the prepared pan.

  5. Sprinkle with wine.Season with salt

  6. and pepper,then sprinkle with

  7. shallots.Cover with foil and bake

  8. until opaque in the center and

  9. starting to flake,15-25 mins.

  10. depending on thickness.

  11. 3.When the salmon is ready,transfer to

  12. dinner plates.Spoon any liquid

  13. remaining in the pan over the salmon

  14. and serve with lemon wedges.

I THINK I MIGHT LIKE IT I WILL TRY IT ONE NIGHT THIS WEEK. I LOVE FISH BECAUSE I GREW UP IN MYRTLE BEACH WHERE YOU COULD GET ALL THE FISH YOU WANTED AT ANY TIME. THANKS GERRIE

This is such a simple and quick recipe to fix salmon. Covering it to cook is going to make it so tender. Also, spooning the remaining liquid on top is a nice touch. Wonderfully low in carbs.
