Polynesian Chicken

Ingredients

  • 2 pounds boneless chicken breasts

  • 4 ounces fat-free red Russian dressing or French dressing

  • 1/2 cup sugar-free apricot preserves

  • 1 small envelope of onion soup mix

Directions

  1. Preheat the oven at 350 degrees F.

  2. Wash the chicken and cut into 2" pieces, and place the pieces in a small casserole dish. Mix the remaining ingredients and pour 1/2 of the sauce over the chicken. over and bake for 45 minutes. Stir in the remaining sauce and bake uncovered another 20 minutes, Tender and savory.

Chicken is popular is our home, so this is a winner, though he is knocked out and I can not remember all his allergies to fruit (there is SO many) but I don't recall this one..anyhow I think this one will work, ty very much. Sheila N Ty

Those sugar free apricot preserves are just wonderful in many different recipes. I can't wait to try them in this recipe.
