LAZY TOM YUM

Ingredients

  • 1 16 oz can chicken broth

  • 1 can coconut milk

  • 8 oz sliced mushrooms

  • olive oil

  • 1/2 6 oz can bamboo shoots, canned cut into strips

  • 1 1/4 lb chicken breast

  • 2 scallions — sliced

  • 2 tbsp sesame oil — tabasco or chili oil

  • 3 tbsp lemon juice

  • 1/4 tsp chicken bouillon

  • salt — to taste

Directions

  1. Sauté the mushrooms in a good-sized pot, like a spaghetti pot. Add everything else, cook on medium heat until the chicken is cooked.
