Ingredients
1 16 oz can chicken broth
1 can coconut milk
8 oz sliced mushrooms
olive oil
1/2 6 oz can bamboo shoots, canned cut into strips
1 1/4 lb chicken breast
2 scallions — sliced
2 tbsp sesame oil — tabasco or chili oil
3 tbsp lemon juice
1/4 tsp chicken bouillon
salt — to taste
Directions
Sauté the mushrooms in a good-sized pot, like a spaghetti pot. Add everything else, cook on medium heat until the chicken is cooked.
