EGG FOO YONG

Ingredients
4 eggs
1/2 tsp salt
1 cup bean sprouts — fresh
3 scallion — finely chopped
peanut oil — for frying
Directions
Beat eggs with salt. Wsh and drain sprouts well, removig any brown tails or loose skins. Add sprouts and spring onions to beaten egg. Lightly grease a heavy frying pan or wok with peanut oil. Pour in 1/4 cup of the egg mixture. Cook until brown on underside, turn and cook other side. Repeat with remaining mixture. Stack 2 or 3 foo yong for each serving.
