EGG FOO YONG

Ingredients

  • 4 eggs

  • 1/2 tsp salt

  • 1 cup bean sprouts — fresh

  • 3 scallion — finely chopped

  • peanut oil — for frying

Directions

  1. Beat eggs with salt. Wsh and drain sprouts well, removig any brown tails or loose skins. Add sprouts and spring onions to beaten egg. Lightly grease a heavy frying pan or wok with peanut oil. Pour in 1/4 cup of the egg mixture. Cook until brown on underside, turn and cook other side. Repeat with remaining mixture. Stack 2 or 3 foo yong for each serving.
