ST. PATRICK'S DAY CHEESY FISH TOSS

1 1/2 lb smoked salmon -- flaked
or cod, haddock, pollock
1 1/2 lb fish fillets -- white flaked
or cod,haddock,whiting
1/2 lb cheddar cheese
quarter red and 1/4 white
3 tomatoes -- quartered
1 bunch scallions -- chopped
1 head lettuce
- Zippy Green Dressing-
6 fl oz Olive Oil
2 fl oz vinegar
2 tbsp onions -- finely chopped
2 tbsp green pepper -- finely chopped
2 tbsp splenda
1 1/2 tsp dry mustard
1/2 tsp salt
1 dash cayenne

Directions

A lovely salad idea which mixes smoked and white fish with all the traditional salad vegetables and cheese thrown in for good measure. Add life to this zestful salad by tossing it in a zippy green dressing
Prepare vegetables and cheese. Combine all the ingredients and toss in Zippy Green Dressing.
Dressing:Combine all the ingredients in a screw top jar. Cover and allow to stand at room temperature for 1 hour. Shake to blend thoroughly.
