Ingredients
1/2 pound bacon — chopped
2 boiled potatoes — peeled and cubed
1 onion — sliced thinly
8 eggs — beaten slightly
salt
pepper
black pepper
Directions
Saute bacon until crisp. Remove from pan, drain on paper towel. Pour off all but 3 tablespoons bacon fat. Saute onions in bacon fat until soft. Add potatoes and cook, stirring often, until potatoes start to brown. If potatoes stick to pan, add more bacon fat. When potatoes begin to brown, add bacon and eggs. Cook, stirring constantly, until eggs set. Season with salt and pepper to taste.

Add your commentI do this (almost verbatim) as breakfast tacos. Tottillas add a bit of carbs,so try whole wheat or corn tortillas, to slow down that spike. We add a bit of cheese and salsa. Ole!
My client loves this…but potatoes raise his blood sugar too much…so i have substituted fried radish and it is really good that way, too. I also cut the recipe in half…
have to try this, sounds good
you made me home sick with this one, mom used to make it all the time [30 years ago] love it.
