Baked eggs

Ingredients

  • Nonstick cooking spray

  • 6 eggs

  • Chopped fresh chives or desired herb.

  • Kosher salt

  • freshley groend black pepper

  • 6 Tablespoons shredded reduced fat cheddar or monteray Jack cheese

Directions

  1. Coat threee 10oz, casserole with nonstick cooking spray. Carefully break 2 eggs into each casserole; sprinkle with chives, Kosher salt, and pepper. Set casseroles in a 13x8x2" baking pan; place on a oven rack. Pour hot water around casseroles in a pan to a depth of 1".

  2. Bake at 325 degree oven for 20 minutes. Sprinkle cheese on top of eggs. Bake for 5 to 10 minutes more or until egg whites are opaque and yolks are firm and cheese is melted.

I have never heard of baking eggs but this sounds pretty good.

These will even look wonderful in those little casserole dishes. This would be an excellent dish to serve to relatives or guests that stay overnight, not to mention how easy it will be to prepare. People will think you spent lots of time and really be impressed. I have never tried this but this weekend I am going to practice this to be proficient the next time my sons visit

now, i've never baked an egg, without it being in a cake or something like that. i think i will have to try this!
