Crab Salad with Pimento mayonnaise

Ingredients

  • 1/4 cup non fat plain yogurt

  • 2 tbsps reduce fat mayonnaise

  • 2 tbsps pimentos,rinsed and patted dry

  • 1 small clove garlic,minced

  • 1/8 tsp salt or to taste

  • 1/8 tsp cayenne pepper or to taste

  • 2 2/3 cups cooked crab or lobster meat ,picked over (see ingredient note)

  • 6 cups mixed salad greens

  • lemon wedges for garnish

Directions

  1. prep time 20 mins,cook time 20mins.

  2. Combine yogurt,,pimentos,garlic,salt and cayenne in a blenda.Blend until smooth.Scrape into a bowl and mix in crab(or lobster).Adjust seasoning with salt and cayenne.

  3. Divide greens among 4 large plates and spoon salad on top.serve with lemon wedges.

  4. Tip:Ingredient note- Four 1 1/4 pound lobsters yield 2 2/3 cups cooked meat.

I have to try this too. I love crab meat. I know this will be yummy.

Thanks for this recipe. I love pimentos and it is great to have something other than pimento cheese sandwiches.

Now this sounds just like something I would love to try. I actually love the taste of pimento and often make my own pimento cheese. This will surely have a wonderful taste. I think I am going to leave out the garlic to make the crab taste more prominant.
