Crockpot Chicken Tacos

Ingredients

  • 1-2 lbs boneless, skinless chicken breasts

  • 1 can red enchilada sauce

  • 1 can diced green chilis

  • 3/4 cup diced onion

  • Whole wheat flour tortillas

  • Toppings:

  • Grated cheddar cheese

  • Diced Tomatoes

  • Shredded lettuce

  • Sour Cream

  • Salsa

Directions

  1. Place chicken, enchilada sauce, green chilis, and onion in crockpot. Cook on low heat for 3-4 hours. When fully cooked, shred chicken with fork.

  2. Serve on warm whole wheat tortillas and top with cheese, lettuce, tomatoes, and sour cream.

  3. If you are running high, you can easily turn this into a very low-carb taco salad by simply eliminating the tortilla.

this looks great, i have to try this recipe soon. i do have to say it will be the first time it took 3-4 hour to make chicken taco.

the crockpot chicken tacos receipe includes 1cup of green chiles…the problem is therer's 50 different types of green chiles. tough decission for a latino lieme to make..can i get a specification.

I found there is a profound difference in taste between red enchilada sauce made with tomato and those made with red chiles. After eating the red chiles the tomato tastes awful. I use red chile version of red enchilada sauce as a base for my soups.

This is great, a recipe that also provides further information for making it lower in carbs by making it a taco salad. It sounds delish!

LOVE this one. Sounds very similar to one I do however I first grill the chicken to get extra flavor. Leave out the tortilla and it's a great taco salad. I also top with diced black olives. (about a 1/4 teaspoon)
