Black Bean Brownies (Gluten Free and Low Carb)

Ingredients

  • These are flourless brownies made with pureed black beans! You won't believe it! You can substitute spices for the vanilla. I used about 1 tsp. Penzey's Apple Pie Spice and it was terrific.

  • 1 (15 1/2 ounce) can black beans (rinsed and drained)

  • 3 eggs

  • 3 tablespoons oil

  • 4 tablespoons cocoa powder

  • 1 pinch salt

  • 1 teaspoon vanilla

  • 3/4 cup sugar

Directions

  1. 1Mix ingredients together in a blender/ food processor until pureed.

  2. 2Pour into a greased 8x8 cake pan.

  3. 3Stir in some chocolate chips and nuts, or leave plain.

  4. 4Bake 350 appx. 30 minutes.

  5. 5Let cool completely before cutting.

OK I finally made these last week and you know what? They werent bad at all! They came out a bit dry but I see below where mamaoak suggests adding applesause for moistness; I have NSA applesauce in the fridge so Im going to try it again tonight and see how they turn out! :)

Here is the healthier recipe for the Black Bean Brownies

1 can (15.5 oz.) Black Beans (drained and rinsed)
4 Large Eggs
2 Tablespoons Extra Virgin Olive Oil
1 teaspoon Vanilla Extract
1 cup Granular Sugar Substitute (Splendor)
3 Tablespoons Unsweetened Cocao Powder (preferably Dark)
(**I use Ghirardelli brand)
1 teaspoon Baking Powder
1/4 teaspoon salt
36 small Pecans or walnut pieces (about 1.5 ounces)

Heat oven to 350 degrees Lightly coat a 8x8 inch baking pan with cooking spray
In a blender or food processor, combine the beans, eggs, oil, vanilla, sugar substitute, cocoa powder, baking powder and salt. Process until smooth
Scrape the batter into the pan and arrange the nuts in even rows of 6 across and 6 down.
bake 35 to 30 m9inutes, until a toothpick in the center comes out clean.
Cut into 36 squares with a nut piece in the center of each.

I don't think your nutrition info is correct. It says the whole recipe is 1 serving and there's only 16 carbs? The sugar alone probably has more carbs than that.

I have used beans in a great many recipes over the years.

these are delious i add 14 cup ao apple sauce makes a moister brownie
