Turkey Meat Loaf

Ingredients

  • 4 pounds lean ground turkey

  • 4 egg whites

  • 1 cup McAnn's Steel Oatmeal

  • 1 head of spinach (finely chopped)

  • 1 head of cauliflower (finely chopped)

  • 1 head of broccoli (finely chopped)

Directions

  1. Prepare one cup of McAnn's Steel Oatmeal (you can also use one or two small cans of tomato paste), let cool.

  2. In a food processor, separately grind up 1 head of fresh spinach, 1 head of cauliflower and 1 head of broccoli (you can also use peppers, carrots or other vegetables to suit your taste).

  3. Mix 4 pounds of lean ground turkey, the oatmeal, the ground vegetables, and 4 egg whites in a bowl.

  4. Cook uncovered at 350 for approximately 90 minutes.

  5. Many variations can be used. I've used a half cup of apple sauce, a splash of sherry, ground carrots, ground mushrooms and other things. The essentials are the turkey, the egg whites and the vegetables. Everything else is up to you.

I always make meatloaf with turkey, but I never used the veggies before. I will definitely give this a try. I like the idea of all in one.
