Spring Salad

Ingredients

  • 1 cup - Spring mix salad

  • .5 oz - ALMOND, BLANCHED, RAW

  • .5 oz - SUNFLOWER SEED, NO ADDED SALT, kernels, dry roasted

  • 1 tomato - TOMATO, RED, RIPE, RAW, year round avg, Italian

  • 1 oz - KIDNEY BEAN, BOILED, NO ADDED SALT, California red, mature seeds

  • 2 oz - LIMA BEAN, BABY, FROZEN, immature seeds, unprep

  • 6 oz - BLUEBERRY, RAW

  • 1 tbsp - VINEGAR, APPLE CIDER

  • 1 oz - CHICKEN BREAST, BONELESS, ROASTED, MEAT ONLY, broiler/fryer, meat only

  • 7 croutons - CAESAR CROUTONS, WHOLE GRAIN

  • .5 tsp - GARLIC POWDER

  • 1 tsp - ONION POWDER

  • 3 grams - PSYLLIUM DIETARY FIBER, SUGAR FREE, smooth texture, dietary supplement

Directions

  1. Recipe Directions:

  2. combine the salad ingredients and toss.

  3. Make a dressing with 3 grams Psylium husks, 1 tbls vinegar. (I often substitute raspberry vinegar for apple cider vinegar) 1/2 cup water, 1/2 teasspoon garlic powder, 1 tsp onion powder. Pour the dressing over the salad and enjoy.
