Peppy Peppers

Ingredients

  • Prep Time: 30 to 40 minutes

  • Cooking/Baking Time: 75 minutes

  • 1 Large green pepper, diced

  • 1lb. 90% lean ground beef

  • 1tsp. salt

  • 1/4tsp. pepper

  • 1 cup dry long grain rice

  • 1 qt. no salt added tomato juice

  • 7 tsp. dry taco seasoning

  • Velvetta cheese, cubed, optional

  • Taco Seasoning Mix

  • 6 tsp. Chili powder

  • 5 tsp. paprika

  • 4 1/2 tsp. cumin seed

  • 3 tsp onion powder

  • 1 tsp. garlic powder

  • 2/3 Tbsp dry cornstarch

  • Taco Seasoning

  • Combine all ingredients in bowl.

  • One third of mix (about 7 tsp.) is equivalent to 1 pkg. (1.25 oz.) purchased taco seasoning mix.

  5. Place pepper in greased 2 qt. casserole

  6. In skillet, brown ground beef. Drain off dripping. Season Meat with salt and pepper. Spread seasoned beef over green pepper.

  7. Sprinkle rice over ground beef.

  8. In a saucepan, or skillet in which you browned the beef, combine tomato juice and taco seasoning. Bring to a boil Pour over rice and beef.

  9. Cover Bake at 350 degrees for 60 minutes

  10. Top with Velveeta Cheese if you wish. Return to oven until cheese melts.
