Turkey Sausage with Sauerkraut

Ingredients

  • 1 small onion, chopped

  • 1 tsp margarine

  • 1 jar (32 ozs) sauerkraut, rinsed and drained

  • 1 lb fully cooked reduced-fat smoked turkey sausage, cut into 1/2-inch chunks

  • 3-1/2 cups diced cooked peeled potatoes

  • 1 medium unpeeled tart apple, diced

  • 1 cup apple juice

  • 2 tbsps brown sugar

  • 2 tbsps all-purpose flour

  • 1 tbsp caraway seeds

  • 2 bacon strips, cooked and crumbled

Directions

  1. In a large saucepan, saute onion in margarine until tender. Add sauerkraut, sausage, potatoes, apple and juice.\n\nIn a small bowl, combine brown sugar, flour and caraway; stir into saucepan. Simmer for 35 minutes, stirring occasionally. Sprinkle with bacon. Serves 12 (1 cup)
