Saucy Chicken

Ingredients

  • 2T Olive Oil

  • 4 Skinless Chicken Breasts (or thighs)

  • 1/4 C White Wine

  • 3 Garlic Cloves (minced)

  • 1 Medium Onion (diced)

  • 1 C Diced Carrots

  • 1 28oz. Can of Crushed Tomatoes

  • 2 t Raw Sugar or Truvia

  • 1T Fresh Rosemary (minced)

  • 1/2 C Fresh Itilan Parsley (minced)

  • 1 Small Can Sliced Black Olives

  • 2 T Parmesean Cheese

Directions

  1. Heat oil in a large skillet over medium high heat. Add chicken and saute on both sides for a total of 10-15 minutes. Remove chicken and add diced onions, garlic and carrots. Saute for about 5 minutes. Add wine, tomatoes and sugar and stir well. Return chicken to skillet and simmer uncoverd for 20 minutes. Add rosemary, parsley and olives and simmer for 5 minutes more.

  2. Turn chicken and sauce into serving bowl and sprinkle with Parmesean cheese.

  3. When I first chose to make this recipe, I didn't realize what a wonderful sauce it was going to make. You can make home made spaghetti sauce (without the chicken) for your meatless meals. It is a wonderful flavorful sauce with just a kiss of sweet. The key is FRESH herbs.

  4. Serve with your favorite Dreamfields pasta OR a whole grain loaf and a fresh salad and you are all set.
