Parmessan Roasted Asparagus

Ingredients

1 pound asparagus,trimmed,cut into

thirds.

1 tablespoon (1/2 ounce)grated

Parmessan Cheese.

2 teaspoons olive oil, preferably extra

virgin.

Pinch of salt

Ground black pepper

4 Lemon wedges or white wine vinegar

Cooking Instructions

Preheat the oven to 425F. In a baking pan large enough to hold the asparagus in a single layer,combine the asparagus,cheeseoil,and salt. Toss to coat the asparargus evenly.

Bake for 8 to 10 minutes, or until the asparagus is tender (time will vary depending upon the thickness ofthe asparagus). Season to taste with pepper. Serve with lemon wedges or splash with white wine vinegar.

My menu for Christmas Eve includes fresh asparagus. This is a much better way to prepare it than what I had in mind. Can't wait to try this.
