Haystacks

Ingredients

  • 4 squares baking chocolate, unsweetened (I prefer Hershey’s)

  • 2 tablespoons unsalted butter

  • 1/4 cup coconut oil

  • 2 1/2 teaspoons SteviaPlus

  • 16 packets sucralose

  • 1/16 teaspoon sea salt

  • 1/2 teaspoon vanilla extract

  • 2 tablespoons milk and egg protein powder

  • 1/4 cup soy protein isolate

  • 1 3/4 cups unsweetened coconut

Directions

  1. Combine the chocolate, butter, and coconut oil in a microwave safe bowl; microwave on high power for about

  2. minutes or until the chocolate melts, stirring partway through.

  3. Add all the remaining ingredients except the coconut, and stir until they are smooth.

  4. Add the coconut gradually, stirring the candy after each addition. After it is all incorporated, drop the candies

  5. by teaspoonfuls onto waxed paper and chill them in the refrigerator before serving.

Always glad to have a new candy recipe. I am going to my diabetic support Christmas party in two weeks. I am going to take this. I especially like that the recipe calls for Stevia. It is a good product.
