No-Crust Pumpkin Pie (sugarless)

Ingredients

  • 3 eggs

  • 1 c. milk

  • 4 tbsp. flour

  • 1 c. sweetener (Splenda or such)

  • 1 (16 oz.) can pumpkin

  • 1/2 tsp. salt

  • 1 1/2 tsp. vanilla

  • 1/2 tsp. cinnamon

  • 1 tsp. pumpkin pie spices

Directions

  1. Just mix up all the ingredients and pour into a lightly greased pie pan. Bake at 350 degrees for 1 hour. Allow to settle for at least 20 min. Serve with whipped cream.

I have made this in the crock pot. I use about 1/2 the amount of splenda, and about 2 T of biscuik or self rising flour. Turns out great. A little watery but not too bad when you leave out the flour. (I tried it for a friend w/ celiacs) 4-5 hr in the crock pot, and your oven can be doing something else (1st 2 hrs on high, then put on low for the rest)

This is ok, but it is not pie! Duh- it's pudding. Nevertheless, I would tweak it a bit: I don't have confidence in these fake sugar products, plus I find that almost all sweet recipes contain way too much sugar, so I would replace the splenda with 1/2 cup of brown sugar. Also, I would switch up the milk with almond milk. I have never put flour in my pumpkin or sweet potato pie filling- with all those eggs, why does one need it?

i made this with a walnut crust that was carb friendly also used splenda just pressed it in bottom of pan and it was great!!!

do you have a crustless recipe for lemon pie. or can you pretty much use this one without the pumpkin spices, etc.? this one sounds good and I am planning on trying it this week. thanks.

Oh, celiac disease and diabetes? What's that leave you with, rocks, twigs, and water? At times I've felt like that's all I can eat without shooting my BS sky high. And all I've got to worry about is diabetes. Knew a lady who's 2 year old is "severely allergic" to carbs - no fruit, very few veggies, no grain products, no potatoes…basically he could have rocks, twigs, water and meat. Cried at almost every meal because the rest of the family (5 sibs, 2 parents) did NOT eat that way and could eat all kinds of yummy things. The old saying "Thought I was bad off with no shoes, til I met someone with no feet!" Pat

In reading the comments on this recipe I'm floored that people need crust and think it's ok to eat if you cut back on the fat. It's the CARBS contained in crust. All that flour is going to do nothing but spike your glucose levels. I think this recipe will go right along with my crustless cheesecake as an all time favorite. Bu please remember, NO CARBS!

Yes Hastl, and Becky, I think it would be beeter with the crust. I'm sure you can find a premade sugar free and maybe glutton free pie shells somewhere.

Oh I am so happy to see this.. Seems so hard to figure out how to eat when diabetes and celiac disease are the problems.

Sounds great, but I don't think I can go without the crust so I will improvice and use egg substute instead of eggs, and make my own crust with less fat than most recipes call for. But I will also use this recipe for a baked pudding. I know that will go over great with my family. It's just that they would laugh me out of the kitchen If I told them that it was a crustless pie!

how many calories in 1 piece. to do weight watchers points i need calories, fat content and fiber to figure.
