Chicken apple crunch salad

Ingredients

  • 2 cups cooked cubed chicken

  • 1 cup diced Gala apple

  • 1/2 cup diced celery

  • 2 tbsp.chopped scallions

  • 1/4 cup dark raisins

  • 1 1/3 cup low-fat mayonnaise

  • 1 tbsp. low fat sour cream

  • 1 tsp lemon juice

  • 1/4 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 tsp fresh ground black pepper

Directions

  1. Combine the chicken,apple,celery.scallions and raisins in a salad bowl.

  2. Whisk together the remaining ingredients and pour over the chicken apple salad.

  3. Mix well.Serve over lettuce if desired.

  4. This recipe shows how you can reduce fat in mayonnaise-based dressings.

  5. The addition of a crunchy, crisp apple makes the salad more interesting and boosts fiber.

I think I will add plain yogurt in place of the sour cream and use less mayo next time. Maybe use grapes cut in half instead of raisins.

I don't go for scallions, but otherwise, yum! Also, if you add walnuts, you've got yourself a Waldorf Salad w/ chicken. Double yum!

I plan to try this with the leftover Thanksgiving turkey. I will also substitute the raisins with dried cranberries and leave out the salt.

I thought the 14 grams of sugar was kind of high - I will add less raisins which should lower the sugar count. I will also add some walnuts for "crunch" and which are good for you.

I'm wondering if the amount of mayo is correct. Seems like a lot??

This is a very good recipe that is low carb enough to enjoy without feeling guilty. I plan on fixing this using some of my leftover turkey instead of the chicken.

This is a great recipe. I only eat Gala apples. I know this will tASTE FANTASTIC.

Salad Lovers this is a new recipe I found in a Health magazine,for me I haven't tried it yet..I think the sugar content might be too much for me,also the sodium content is kinda high but I guess I can leave out the salt…
