Ritz Cracker Stuffing

Ingredients

  • 1 cup coarsely chopped mushrooms or broccoli

  • 1/2 cup chopped onion

  • 1/2 cup chopped celery

  • 1/4 cup (1/2 stick) butter or margarine

  • 1 pkg. (1 lb.) Ritz crackers, coarsely crushed (about 7 cups crumbs)

  • 2 cups walnuts, coarsely chopped

  • 1/4 cup chopped fresh parsely

  • 1 tbsp. poultry seasoning

  • 1/2 tsp. ground black pepper

  • 1 can (14-1/2 oz.) chicken broth

  • 2 eggs, beaten

  • 1/4 cup chopped

Directions

  1. Preheat oven to 325 F. Cook mushrooms, onion and celery in butter in skillet on medium heat until tender.

  2. Mix cracker crumbs, walnuts, parsley, poultry seasoning, pepper and vegetable mixture in large bowl. Add broth and eggs, tossing until well blended. Spoon into 2 quart baking dish or pan; cover.

  3. Bake 30 to 40 minutes or until heated through.

kiddo! this sounds really good! i'm not in charge of the thanksgiving meal,but i think i'll being trying this for christmas.
