Baked Spinach

Ingredients

  • 1 Tbsp butter

  • 1/2 cup chopped onions

  • 2 - 10oz. packages of frozen chopped spinach (thawed & drained)

  • 2 Tbsp parmesan cheese

  • 3/4 cup low fat ricotta cheese

  • 1/4 tsp. ground nutmeg

  • 1/8 tsp garlic powder

  • salt and pepper (to taste)

  • 1 - 8 oz can tomato sauce

  • 1/2 tsp. dried oregano

  • 1/2 tsp. dried basil

Directions

  2. Melt butter in a large skillet over medium-high heat. Add onions and sauté until golden. Remove from heat.

  3. Stir in spinach, parmesan cheese, ricotta cheese, nutmeg, garlic powder, salt and pepper.

  4. Spoon into a 9-inch pie pan that has been sprayed with non-stick cooking spray.

  5. Combine tomato sauce, oregano and basil. Spread evenly over spinach mixture.

  6. Bake uncovered at 350 for 25 minutes.

  7. Let stand for 5 minutes before serving.

  8. Makes 4 servings
