Ricotta Puffs

Ingredients

  • 1 cup ricotta cheese, 3/4 inch thick

  • 3 eggs

  • 1/4 cup flour

  • 4 tsp baking powder

  • 1/4 tsp salt

  • salad oil

  • powdered sugar

Directions

  1. Beat ricotta with eggs & sugar till blended and smooth. In another bowl,

  2. stir together flour, baking powder & salt;add to ricotta mixture, beating

  3. till smooth.

  4. Pour oil into deep pan to depth of 1 1/2";heat to 360 on deep-frying

  5. thermometer. For each puff, drop a rounded teaspoonful into hot oil; fry

  6. several at a time till golden brown (about 1 1/2 minutes). Lit out with

  7. slotted spoon; drain well.

  8. If made ahead, let cool, then wrap airtight and rerigerate. To reheat,

  9. arrangepuffs on single layer on rimmed baking sheet; place in 350oven or

  10. about 10 min., or till heated through.

  11. Dust with powdered sugar and serve hot. Makes 3 1/2 doz.
