Turkey Broccoli Casserole

Ingredients

  • 2 (10 ounces) packages frozen broccoli

  • 2 cups cooked and diced turkey

  • 1 (10 ounce) can cream of mushroom soup

  • 1/2 cup heavy cream

  • 1/2 cup Cheddar cheese, grated

Directions

  1. Heat oven to 375 degrees F

  2. Cook broccoli according to package directions. Layer in 12 x 8-inch baking dish. Spread turkey evenly on top.

  3. Combine soup with cream, mix until smooth and pour over turkey. Sprinkle grated cheese on top. Bake for 30 minutes. Let stand 5 minutes before serving.

Sounds like a dish I frequently make, except you can also use chicken breasts, cooked and pulled or cut up. Instead of heavy cream, I use ½ cup 2% milk and mix in 3-4 Tablespoons low fat mayonaise for a creamy texture. Top with the cheese and top that with a couple of low-fat ritz crackers for a nice crunch. It's called "Chicken (or Turkey) Divan. Yummmy!

Sounds delicious, but I would definitely use low fat and low sodium versions of any ingredient I could.

I used chicken instead of turkey. I used half & half instead of whipping cream. I used low sodium/fat free mushroom soup with lowfat cheddar cheese. It was kind of rich but tasty.

This would be a great way to use left over turkey from Thanksgiving. We all like broccoli and turkey.

The turkey and broccoli recipe, look like it would be easy to make, and it has all my favorites foods included,plus it's a one pot meal which I like as well. But I was wondering could I add macaroni elbow noodles to the recipe, Please write me back and let me know.
