Eat To Beat Diabetes by Reader's Digest

A 320 page hardcover cookbook that has over 300 recipes that are "low in carbs, low in fat and high in flavor". While I can't speak to these claims, because I just received the book as a gift yesterday, I can, however, review its contents. All in all, the recipes sound delicious, the pictures are appealing and the ingredients are mostly fresh; some I use regularly and some I have never heard before. Some informative information at the end of the book but mostly recipe oriented.

That's how I started. Bought a few that were a waste, but learned a lot through the process.

I just ordered this and 3 other books dealing with cooking and menu help… I can cook, jst can't plan a menu that works, so hopefully a combo of all 4 books i will be able to make a menu that will work for me and my family:)
Thanks for the heads up on this book

Good luck with it. Let me know what you think. There are a few recipes that I am dying to try. Just need to free up some space in my fridge/freezer.

My daughter said she ordered this last night for me and I'll get it in the mail soon as she didn't find it in her local book store in time for Christms. I can't wait.

Sounds perfectly natural to me. While I was at the store earlier, I was looking for another binder because I am running out of room in my others, yet again. This will be my fourth. But that doesn't include the books and box of magazines and clippings. I swear I will get it all organized one day…but not today.

Looks like one I might look into. I seem to have a cookbook collection, then I go create my own. Not sure what that is all about.

Good for you. A woman who likes a challenge. I like that.

Pros

Good variety of recipe catagories; breakfast, lunch, dinner, and all things in between.
Thorough explaination of the food exchange (even though I am still struggling to understand it), with a seven day meal plan that centers around using it.
Nutritional information is stated at the end of every recipe.
Along with tips and ideas for add ins or substitution.
Good cookbook for anyone who loves to cook and can make adjustments.

Cons

The ingredient lists, for many of the recipes, are as long as your arm.
Not a problem for people who love to cook and have the time spend doing it.
Quick fix meals are few and far in between.
There are high carbs, calories and soduim counts, in a lot of the recipes.
These numbers range in the high 400's (calories) and 700's+ (sodium).
Some total carbs in the high 40's to mid 70's, which won't work for someone who's on a limited carb diet.
Not a book for beginners, those who don't cook much or those who don't want to spend the time shopping for the necessary ingredients.
