Hi Dawn, I found a good site to get reasonable recipes. Go to: www.angelfire.com/journal/wwrecipes/
I think maybe you will find some good recipes here to satisfy your sweet tooth!
Looking carefully at some of the recipes you can get recipes that are low in carbs but remember to stick to their serving size so you do not overdo. Good luck.

Hello, I am of the school of thought that there is nothing out there that cant be eaten as long as you take portion size into account.
What you like sounds like a nightmare but if you take a spoon full only of each, it should not be that bad.
I have been known to take chocolate, chew it up and get the taste in my mouth, then spit it out without slowllowing. I know, its against all common sense and against the rules of the chocolate gods, but I have been known to do that.

you are a man of great discipline, bless and praise to you. It makes great sense and hopefully others will learn from your example.

Well, I cut everything in half and then cut it in half again. Or I might have a bite or two and that's it if I really like something. I constantly remind myself that if I go back to the my old way of eating that I could lose my vision. So I weigh my options. Do I want to see later in life for the food in question or do I want to stay on track and look at all of the beauty in the world like my son growing up etc? It may sound lame, but it really is mind over matter and your the only one holding the fork. Portion control is not the end of the world, although it seems like that at first. There are lots of options with food and many substitutions that one can do, to eat the treats they once liked. I'm finding foods that I like that I never really cared for before. Look at it as an oppertunity to learn something new along the lines of food choices, try different things and keep an open mind.

Hello Dawn!

Whatever special treat that you crave, can be fixed for people with Diabetes. Here is the recipe for your ice cream.

**Mint Chocolate Chip Ice Cream**

Ingredients:
1 1/2 cup heavy cream
1 cup half 'n half
1/2 cup very cold water
3/4 cup Splenda
1/8 teaspoon salt
1 teaspoon mint or peppermint extract
1 teaspoon green food color
1/4 cup sugarfree chocolate chips

Put first six ingredients in a bowl and use mixer until Splenda is well mixed and dissolved. Carefully mix in green food color.

Pour into your rotating ice cream freezer andbegin mixing. (Most ice cream makers take 30-40 minutes to freeze properly.)

Five to seven minutes before completion, slowly pour chocolate chips into ice cream maker.

Makes 8 1/2-cup servings — 4.5 carbs.
