Meal planning for a Diabetic that won't eat veggies

I am looking for some help in trying to plan meals for my husband who won't really eat veggies...corn, green beans, peas, and carrots are about it. He is VERY fussy about the food that he eats. I am at my wits end about trying to cook healthy meals because he won't monitor what/how much he eats. He doesn't exercise...he sits at the computer all night/weekend playing on the computer and watching TV.
Any help is GREATLY appreciated.
I am about to give up.

Try one of my favorite sites for recipes. They are low carb and tasty. Maybe you can sneak in some veggies!

Try cooking smaller meals and when he complains tell him you will give him more if he eats more veggies. And
don't give in to him. Those were the only veggies I use to
eat and now I eat all kinds of veggies and like them. Dan

I do appreciate the thought but he will not go for that. Like I said he is VERY fussy. I need to figure out how to get him moving as well as finding new meal plans. I am finding a lot of recipes on here that I would LOVE, but he would starve before he ate.

I am a diabetic and I have been married to a diabetic. I do not believe it is the spouse's job to manage the diabetic's program. I had to detach with love from my spouse when he would eat his chocolate candy bars, give himself extra insulin and then be seriously hypoglycemic. And I can't and don't expect my spouse to control my eating and exercise. I support and expect support, but the ultimate responsibilty is the person with the diabetes. So with utmost care for you and your spouse, I would suggest that you might back off a little and support your husband in making his own choices as an adult. If he makes bad choices there will be consequences, but in the end you did not cause his diabetes, you cannot control it and you certainly can't cure it. If he wants to eat green beans all the time or no vegetables at all, it is his choice. Best wishes for you both. It is a tough journey.

I agree 100%. I am diabetic and I thought that now that I am cooking healthy for me, that my husband would get healthy too. His trouble is Triglycerides and cholesterol. But alas, he goes away from many meals with only eating the meat portion. Then later he snacks on stuff. I used to fight it, but now I realize that I cannot change him anymore than he can change me. I have to do for myself. He supports me and encourages me, I wish I could do the same for him, but his efforts are not there at all. Even the doctor "intervention" didn't help. So you can only do what you can, the rest is up to him.

I do understand that, but that doesn't make it any easier to deal with. I get so frustrated. It is even harder for me since I haven't gotten in the mind set of thinking like a diabetic. I keep telling myself that I won't buy the junk food any more but then the next shopping trip here it all comes back in the door again.

I just went thru some of that myself. I have decided that if they want junk food, then they get to buy it. I am not going to do it anymore. I get frozen lunch things for my husband, but I don't touch that stuff, so it is not a problem. It is all the snacky foods...so today I came home with a ton of fruit and veggies....we will see how that works.

I dunno a answer here but just wanted to say you are not alone, my finance is the same...actually I can not get him to eat ANY veg, except corn and he's got some problem where he's not suppose to eat corn even. *sigh^ Hugs!! Sheila

I notice that everyone keeps calling corn a vegetable, when it is in fact a GRAIN. Also remember that it is fed to cows to fatten them up!

Thanks for that info Skip, I will definitely remember to cut down on how much of the corn we consume now. Although it will be hard since that is my favorite.

Oh, MY! My husband is not a diabetic and watches his weight, stays around 200 # and is 5'10, not skinny, BUT--he was always hollering at ME to not eat this and that, made me so made that I ate twice as much anyway!

Now that I am eating more balanced meals etc, he PASSES the potatoes etc to me, he KNOWS that they kick my BS up about 60 points--I just polietly say, "No, thank you" As for making, or suggesting what my husband should eat---he is the stickler---It sounds like he doesn't care enough, or isn't aware enough of what could happen to him if he doesn't at least TRY to learn to like what foods are better for him, Even if he doesn't crave them, he can still learn to eat them, follow it with a big, icy glass of water! or a piece of sugar free candy as a reward or inncentive! Hey Skip!! I still LOVE CORN ! hah--Yes, I am as big as a cow too! ha___PR
