Soba noodles

Does anyone know about Soba noodles? Made from Hard Winter and Hard Spring Wheat Flour (what does that mean?), whole buckwheat flour.

We had a taste of Soba noodles - with 21+ different vegetables and Sriracha Hot Chili sauce (www.huyfong.com Bullet-link) - at the Cubs spring training games in AZ earlier this year. I finally found the noodles at Krogers. The website is www.edenfoods.com Bullet-link.

Any experience with these noodles?

    I have never heard of them, but tell me how they treat your numbers. I love pasta, but it doesn't like me. So far, Dreamfields Pasta is the only friendly one I have found, so it would be good to know about any others out there.
