Hi all! I'm Type II, vegan and am SO pleased to see my numbers going down and my meds being eliminated (Humalog so far). I feel like I'm the only one here, sometimes...so, how about it? ANy other veggie huggers here?

I'm also a 2 and recently converted back to being a vegetarian. I still eat eggs (local, cage-free organic fed chickens) and some dairy. My numbers have not gone down, but I feel so much better! I eats lots of beans & tofu for protein. Congrats on managing your diabetes!

Hi I'm new but very interested in the concept, would you please describe what (1) days typical menu might be.

Thanks

I did a month of Vegan and though it was helpful, I found it too time consuming in many respects. If you look up vegetarian or vegan in our Search Discussion tab, you will find some of my discussion on this topic. I also posted some recipes in our Recipe Section for people to try.

What I do now is a combination. I eat as much raw food as I can and now that I have a dehydrator I am much happier. I still do my own sprouting and slip in a meatless meal on many occasions. I am not a big fan of tofu, except as like a breakfast "eggs", but there are 100's of choices out there.

There are websites that focus on it and I found one that has monthly potlucks so everyone can try different things and share recipes. Pretty neat concept. Unfortunately for me, I think it was out West some where.

I would choose vegetarian over vegan, but the idea of both are very healthy. It is something I could manage better if I did not have a family who is not interested in eating more veggies. The thing to do is just to make sure you have a balance and don't go to an extreme that will cause you to either binge on unhealthy things (because even in Vegan lifestyle, there is a lot that is not diabetic friendly) Or you don't want to find you are lacking in any one area. Overall, I think it is a great way to eat and live.

Hello, I am insulin Dependent T2, Not a vegan but my wife is. So from time to time, I eat more non meat meals myself. Last night we had a dish with Fried Tofu, Bean sprouts and some type of thin pasta with a sauce. It tasted great. I know the pasta is a carb item as well as the Tofu is a lower carb, but still a carb. All in all, its was a great meal. I love cheese so Tofu (soycheese) is fine with me.

Tofu is a protein, not a carb! It is nothing more than soy cheese, really. Per 2.9 oz serving, it has only 3.5g of carbs, and 12.8g of protein! The danger here is that it also, in it's normal form, has 7g of fat, so lower fat tofu should be chosen. We make our own, and by making our own soymilk, are able to make the tofu low fat.

I've eliminated humalog with meals and am now lowering my nightly Lantus by ten units!

That is fantastic. I know that a healthy lifestyle is our best weapon against this disease. Well, that plus exercise. I know that before I was able to get medical care (about 9 months) eating better helped me drop my levels about 100 points without meds. Unfortunately, meds got me the rest of the way, but it sure does help a lot.

I am also vegetarian, not vegan. There are many good recipes on the site that are meatless meals. I have never eaten meat, not even as a child. I have been talked into a taste or two in my lifetime and found that I didn't like it at all, so I didn't feel that I was missing a thing.

Just wanted to update - in the 3 weeks I've been vegan, I've dropped Humalog completely, my Lantus is down to 35u at night instead of 50u and I have lost 10 pounds! No more constant diarrhea, lots more energy and the fibromyalgia pain is down to a low ache! All from a simple diet change! Why on earth would ANYONE keep eating the standard U.S. diet and popping all those pills and taking all those shots when something this EASY will FIX IT?!?! It is important to note that this is a *healthy*, low fat vegan diet - it is quite possible to eat vegan and still be unhealthy!

I also wanted to say that the whole vegetarian vs vegan thing make me itch! A vegetarian eats VEGETABLES!!!! If you eat ANY animal products AT ALL, you are NOT a vegetarian, you are an omnivore! I hate having to say vegan when vegetarian should do all because people who eat all sorts of non plant based foods still feel justified in calling themselves vegetarians! Chickens, eggs, cheese and fish, the last time I checked, do NOT grow on trees!!!

Thanks for letting me vent!

Peace, (really!)
