Coping with early diagnosis

I was diagnosed with GDM at approx. 12 weeks pregnant, and put on insulin after 4 days of BG monitoring. I'm now over 26 weeks pregnant, and not doing well. It seems no week goes by without having to run for another test or other medical management, and coming up with something to eat 6 times a day is basically just another chore that I have to struggle through. I just moved and had to change doctors and supervising Perinatologists. My previous doctors blew off my concerns about being induced, and every time I see my current doctor he tells me how I have a high risk of C-section because of my weight.
I can't find anything in the medical literature suggesting how to lower my chance of induction/C-section now that I'm pregnant, and I really need suggestions about how to cope with another 12-14 weeks of this strict (and increasingly intensely supervised) routine.
