Like "I miss them too, which is why I try 3-4 bites every now and then. I've been sauteeing them in coconut oil with orange and red peppers and onion. I'm ok with 1/4 to 1/2 cup as long as I have eggs or a small peice of meat with it. Haven't tried potato salad in years. Think I will experiment with this idea of lemon juice and refrigeration and see if it helps. Like you, mashed potato or baked w/out skin makes my BGs fly up faster than anything except white bread."
