Corn I pretty much avoid for BG and GMO reasons, though I occasionally give in to a corn taco or an individual ear of corn from the garden. Carrots I eat all the time and don't have a problem with. They originally got a high glycemic index rating because the original study was done on a very small population and appararently had someone like you in it. The recent studies have moved carrots significantly down the GI scale."
