Deluxe Scrambled Eggs

  • 3 eggs — at room temperature

  • 2 tablespoons onion — chopped

  • 2 cloves garlic — chopped

  • 1/4 teaspoon chili powder

  • 1/2 teaspoon tabasco sauce

  • 2 tablespoons fresh parsley — chopped fine

  • 2 ounces ham — cubed

  • 1 ounce cheddar cheese — grated

  • salt and pepper — to taste

  • 1 1/2 tablespoons butter

  1. Put eggs in a bowl and add 2Tt water. Stir vigorously with a fork or whisk. Add Chli powder and Tabasco and stir until mixes. Set aside. Heat skillet and add 1 T oil Allow to heat. Add onion and saute for a few minutes, but not brown. Add garlic and continue sauteing 2 more minutes. Add ham & saute until warmed through. Add fresh parsley. Saute an additional minute. Add Egg and allow to set some before stirring. Stir ocassionaly until set. Remove to a bowl or plate and cover with cheese. Set under broiler or in microwave until cheese melts.
