Easy Broccoli Stuffed Tomatoes

Ingredients
  • 4 cups finely chopped broccoli

  • 2 cloves garlic, minced

  • 1 cup nonfat cottage cheese

  • 6 large tomatoes, cut in half lengthwise and cored

  • 1/2 tsp ground black pepper

  • 1/2 cup nonfat plain yogurt

Directions
  1. Blend broccoli, garlic and cottage cheese briefly in a blender or food processor. Stuff tomato halves with broccoli mixture. Top with black pepper and a dollop of yogurt, and serve.

I have been going through alot of these recipes. Its the end of summer and we have so much fresh vegetables from the garden and I trying to find out new ways to prepare. I'm doing this with fresh broccoli,right!! I don't have to blanch it first do I.
