BERBERE SAUCE (ETHIOPIAN HOT SAUCE)

Ingredients
  • Servings 4

  • 2 tsp cumin

  • 4 cloves

  • 1/2 tsp cardamom

  • 1/4 tsp allspice

  • 1/2 tsp fenugreek seed

  • 1 tsp chiles — dried remove seeds

  • 1/2 cup dried onions

  • 2 tsp salt

  • 1 tsp ground ginger

  • 1/2 tsp garlic powder

  • 1 tsp turmeric

  • 1/2 cup salad oil

  • 1/2 cup red wine

Directions
  1. In a frying pan toast the cumin, cloves, cardamom, allspice, fenugreek and chiles.

  2. After toasting, put into a food processor with the onions, salt, ginger, garlic, turmeric, oil and wine.

  3. Remove from food processor and store in a container.

It is very good served with fresh or curried vegetables.
