Chocolate Bavarian Cream Pudding

  • Makes 4 Servings

  • 1 Gelatin, unsweetened, dry packet (Knox preferred)

  • 1/8 cup water , cold

  • 1 5/8 cup fat free milk , 1 1/2 cup plus 2 tbsp

  • 1/4 cup Milk, nonfat/skim, dry

  • 2 tbsp Cocoa Powder, unsweetened

  • 4 tsp sugar

  • 1/8 cup water , hot

  1. Soak the geletin in the cold water for at least 3 minutes. Heat the 1 1/2 cups of skim milk in a saucepan over medium heat just until bubbles begin to form around the edge.

  2. Turn the heat as low as it will go, then add the milk powder, cocoa, and sugar and stir until they dissolve.

  3. Add the hot water to the gelatin, and stir until the gelatin dissolves. Add the gelatin to the milk mixture and stir well. Refrigerate until set, at least 3 hours.

  4. Once it is completely set, put it in a blender with the remaining 2 tablespoons of skim milk. Blend until the mixture has a pudding like consistency. If it is necessary, add more milk to achieve desired
