The Guacamole Imposter

  • Makes 48 Servings

  • 20 oz Peas, green, sweet, frozen , thawed (2 packages)

  • 3 tbsp fat free reduced sodium chicken broth

  • 2 tbsp light mayonnaise

  • 2 tbsp fresh lime juice

  • 2 tbsp fresh cilantro , chopped

  • 2 tsp fresh jalapeno chili peppers , seeded, chopped

  • 1/4 tsp ground cumin

  • 1/4 tsp chili powder

  1. In a food processor or blender, puree all of the ingredients until smooth, scraping the sides at least once.

  2. Spoon into a bowl and serve.
