Blackberry-lemon ice

  • 1 cup water

  • 1/2 c sugar

  • 4 c fresh or frozen blackberries

  • 1/4 c lemon juice

  • 2 tbsp finely shredded lemon peel

  1. In medium saucepan, combine water and sugar. Bring to a boil, stirring often, reduce heat. Gently boil, uncovered for about 2 minutes. Cool slightly.

  2. in blender combine blackberries, lemon juice, and sugar mixture, blend until nearly smooth. Press mixture through fine mesh sieve over medium bowl, discard seeds.

  3. Pour berry puree into a 3 quart rectangular baking dish. Cover and freeze about 1 1/2 hours or until nearly firm. Break up frozen mixture with a fork and freeze for atleast another hour.
