Pineapple Lime Sorbet

This flavorful sorbet is light and refreshing. Add a few drops of green food coloring if you like!

Pineapple Lime Sorbet
  • 1 large fresh pineapple

  • 1/4 c sugar

  • 1/4 c lime juice

  1. Halve pineapple lengthwise, remove fruit. Remove core and discard. Chop pineapple.

  2. In blender, combine chopped pineapple, sugar and lime juice. Cover and blend for about 2 minutes or until smooth. Press mixture throught fine mesh sieve over meduim bowl. Should have about 3 cups puree, discard pulp.

  3. Pour pineapple puree into 2 quart ice cream freezer. Freeze according to manufactures directions. If desired, ripen sorbet about 4 hours.

Pineapple is my favorite fruit. This is going to drive me crazy until I get to the store to buy the stuff I need to prepare it.
