Orange Hummus

Ingredients
  • Makes 24 Servings

  • 1/4 cup chopped parsley

  • 2 tbsp fresh chopped onion

  • 1 medium garlic cloves

  • 1/4 cup orange juice

  • 2 tbsp tahini (sesame seed paste)

  • 2 tbsp rice vinegar

  • 2 tsp low sodium soy sauce

  • 1 tsp dijon mustard

  • 1/4 tsp salt

  • 1/4 tsp ground ginger

  • 1/4 tsp ground coriander

  • 1/4 tsp ground turmeric

  • 1/4 tsp ground cumin

  • 1/4 tsp paprika

  • 15 oz Beans, chickpea/garbanzo, unsalted, canned , drained

Directions
  1. Using a food processor or blender, pulse parsley, onion, and garlic until finely chopped.

  2. Blend in orange juice, tahini, vinegar, soy sauce, mustard, salt, ginger, coriander, turmeric, cumin, paprika, and chickpeas.

  3. Puree until fully combined and smooth.

Serve hummus with pita triangles. Lemon would also work in this for a bit of citrus.
