Lower Fat Veggie Dip

Ingredients
  • Makes 16 Servings

  • 8 oz Sour Cream, light

  • 4 oz Cream Cheese, fat free, plain , 1/2 of an 8-ounce package (or reduced fat Neufchatel)

  • 1 tbsp lowfat milk

  • 1/4 cup chopped red bell peppers , finely (or yellow sweet pepper)

  • 1/4 cup chopped zucchini , finely

  • 2 tbsp shredded carrots

  • 1 tbsp fresh chives , snipped (or green onion tops)

  • 1 pinch salt and pepper (or to taste)

Directions
  1. To prepare: In a medium mixing bowl, beat sour cream, cream cheese, and milk with an electric mixer until smooth.

  2. Stir in sweet pepper, zucchini, carrot, and chives. Season to taste with salt and black pepper.

  3. Serve immediately, or cover and chill for up to 3 days. (Stir before serving).
