Light Whipped Cream

Ingredients
  • Makes 28 Servings

  • 1 unflavored gelatin

  • 1/4 cup water , cold

  • 1/2 cup water , hot

  • 2 tbsp Oil, almond

  • 3 tbsp powdered sugar

  • 1 tsp vanilla extract

  • 1 cup water , ice

  • 1 1/4 cup Milk, nonfat/skim, dry

Directions
  1. First, allow the gelatin to soften in the cold water. Pour the mixture into a blender, add the hot water, and then blend for 2 minutes, or until the gelatin is dissolved.

  2. While blending, gradually add the almond oil and powdered sugar. Chill in the freezer to let the mixture cool for about 15 minutes but be careful not to let it set.

  3. Now, using a whisk or hand mixer, add the ice water and nonfat milk powder to a chilled bowl and beat until peaks begin to form. Add the gelatin mixture and continue to whip until stiffer peaks form.

The whipped cream will last for several days when refrigerated. Before serving, whip again to reintroduce more air into the toping.
