Lean Chorizo

Ingredients
  • Makes 32 Servings

  • 2 lb Pork, tenderloin, lean, roasted

  • 4 tbsp chili powder

  • 1/4 tsp ground cloves

  • 2 tbsp paprika

  • 2 1/2 tsp crushed garlic

  • 1 tsp ground oregano , dried oregano

  • 3 1/2 tbsp cider vinegar

  • 1 tsp kosher salt (optional)

Directions
  1. Begin by removing all fat from the meat.

  2. Then cut the meat into cubes, place in a food processor, and grind to desired consistency.

  3. Add the remaining ingredients to ground pork and mix well.

  4. Traditionally, this sausage is aged for 4 days in the refrigerator in an airtight container before cooking. Leftover sausage can be stored for up to 3 months in the freezer.

This low-fat chorizo recipe is a great alternative for replacing recipes that call for bacon, such as cabbage, bean or potato soup. One or 2 ounces of this chorizo can replace up to an entire pound of bacon.
