1 c plain low fat yogurt
1/2 tsp vanilla
2 fresh figs or apricots, cut up
1 tbsp coarsely chopped walnuts toasted
2 tsp honey
Finelt shredded lemon peel, optional
Line sieve with paper coffee filter, set sieve over small bowl. Spoon yogurt into sieve. Cover and chill 8 to 24 hours. ( Yogurt will thicken to form a soft cheese.
Discard liquid from yogurt. Gently stir vanilla into thickened yogurt.
To serve, spoon figs into small dessert dishes. Top with yogurt mixture and walnuts. Drizzle with honey. If desired sprinkle with lemon peel.
