Apple-Cranberry Crisp

  • 1/3 cup(s) flour, all-purpose

  • 1/4 cup(s) sugar, granulated

  • 1 tablespoon sugar, granulated

  • 1/4 cup(s) sugar, brown (packed)

  • 1/4 cup(s) butter, or stick margarine, cut into small pieces

  • 6 large apple(s), Golden Delicious, 7 cups sliced, peeled

  • 1/4 cup(s) cranberries, dried, sweetened

  • 1/2 teaspoon ginger, ground

Directions
  1. . Combine flour, 1/4 cup granulated sugar, and brown sugar in a small bowl; cut in butter with a pastry blender until mixture is crumbly.

  2. Combine apple, cranberries, ginger, and remaining 1 tablespoon granulated sugar in a large bowl; stir gently. Spoon fruit mixture into an 8-inch square pan coated with cooking spray, and sprinkle with crumb mixture. Bake at 400° for 35 minutes or until golden. Serve warm.

  3. Yield: 8 servings (serving size: about 1/2 cup).
