2 tbsp fresh lemon juice
2 tbsp water
1 tsp dijon mustard
1/4 tsp kosher salt
2 oz silken tofu
1 medium garlic cloves , minced
2 tsp extra virgin olive oil
1 tbsp chopped parsley , finely
12 cup Lettuce, romaine, fresh, shredded (about 2 hearts)
3 tbsp Cheese, parmesan, fresh, grated
Using a food processor or blender, puree lemon juice, water, mustard, salt, tofu, and garlic until smooth.
While still blending, drizzle oil into mixture through food chute and continue to puree.
Spoon dressing into a bowl and mix in parsley.
Add romaine hearts to a large bowl and toss with dressing. Top with Parmesan.
