Makes 40 Servings
16 oz Cottage Cheese, 1% fat , or ricotta cheese
1/2 cup fat free milk
2 medium garlic cloves , peeled and minced
1/4 tsp black pepper
3 tbsp light mayonnaise , or light dressing
1 tbsp distilled white vinegar
2 tsp sweetener (sugar substitute)
Process all ingredients in a blender or food processor until smooth. For a pareve (non-dairy) dip, substitute low-fat pareve cheese for cottage cheese and low-fat, low-carb soy milk for the skim milk.
Serve with an assortment of cut vegetables.
