Curried Peanut Soup

Many soups fill our stomachs while filling us with nutrients—just like this curried peanut soup. And all you have to do is whisk the four ingredients together. It's a simple and delectable recipe you can enjoy for any meal.

Curried Peanut Soup
Ingredients
  • 2 tablespoons fat-free sour cream

  • 1 tablespoon natural peanut butter, at room temperature

  • 1/2 teaspoon mild curry powder, or to taste

  • 1 cup reduced-sodium chicken broth

Directions
  1. In a small bowl, whisk together the sour cream, peanut butter, and curry powder until smooth. Gradually whisk in the chicken broth until well combined. Microwave 1 minute then pour into a mug.

I had this last night it was great. I made it with chunky peanut butter so I would have a little texture and I added thinly sliced mushrooms to it. It was SO filling!! I was shocked. Great recipe.

I have been wanting to make this, and now I finally found a recipe I can use. I am going to make some for dinner tonight. I can't wait to see how it is.
